Easy Rhubarb Galette is a foolproof dessert. It is SO easy to make, also in a tiny kitchen. I am a big fan of keeping a frozen puff pastry in the freezer, so if some last-minute visitor is coming over – the puff pastry is my savior. Amen.
A great thing about a galette is that you can mix whatever fruit you like with butter and brown sugar. It’s still rhubarb season, so it was my number one choice. But you can literally use apple-cinnamon, raspberries-lemon sugar, or strawberry-blueberries combination.
Galette is a flat round cake of pastry or bread. There are different types of galette but I recommend using Google for this one..

TIPS FOR THE LAZY GIRL RHUBARB GALETTE
- frozen puff pastry – you can make a crust at home. I like an easy and lazy version of everything so feel free to use frozen products.
- frozen forest fruit – you can use fresh fruit but don’t feel any shame if you choose to grab a package of frozen forest fruit. Life should go easily. No worries, babes.
- vanilla ice cream – if you are on a budget, buy cheap vanilla ice cream at your local Tesco. We don’t judge.
And on the last note, this lazy girl galette is heavily inspired by the original galette recipe. So don’t come after me and DMing me – BUT THIS IS NOT A GALETTEEEEEE. I know, we all know, chill. Jesus.
HOW TO MAKE RHUBARB GALETTE
Preheat the oven to 180° C. Prepare a baking sheet and baking paper.
Roll out the puff pastry. Peel the rhubarb and chop it up into cubes.
In one pot heat butter, frozen fruits, brown sugar, and peeled cubes of rhubarb, lemon zest, and lemon juice. Cook until boiling.
Once the fruit mixture starts to bubble, take it off the heat. Add cornstarch and mix well until the mixture is thick enough.
Add mixture right into the middle of the puff pastry. Leave a few centimeters from the sides. Fold the sides in so the galette has the shape of a circle.
Beat the egg and use egg wash to brush the sides. Sprinkle with brown sugar and bake for 20-25 minutes.
Take the galette out of the oven and let cool. You can serve galette warm or cold, but I recommend serving it with a scoop of vanilla ice cream.
