
These cottage cheese pancakes are wonderfully soft, fluffy, and incredibly easy to make. 🥞🤍 Cottage cheese gives the batter a delicate texture, while whipped egg whites make the pancakes beautifully light and airy.
Ingredients:
Pancake batter:
- 2 eggs, separated
- 3 tbsp granulated sugar
- 200 g light cottage cheese
- 200 ml semi-skimmed milk
- 10 tbsp all-purpose flour
- 1/2 packet baking powder
For frying:
- oil
For serving (optional):
- fresh fruit
- powdered sugar
- jam
- yogurt
- chocolate or hazelnut spread

They’re perfect for a sweet breakfast, weekend brunch, or even as a quick dessert. Serve them with fresh fruit, jam, powdered sugar, yogurt, chocolate spread, or simply whatever you have at home.
The best thing about these pancakes is how fluffy they are on the inside while becoming beautifully golden on the outside. And you would hardly guess that there’s cottage cheese hidden in the batter!

Fluffy Cottage Cheese Pancakes
Ingredients
Method
- In a bowl, beat 2 egg yolks with 3 tbsp granulated sugar until light and fluffy.
- Add 200 g light cottage cheese and 200 ml semi-skimmed milk and mix together.
- Add 10 tbsp all-purpose flour mixed with 1/2 packet of baking powder and stir until combined.
- In a separate bowl, beat 2 egg whites until stiff peaks form. Add the whipped egg whites to the batter and gently fold them in, being careful not to knock out too much air.
- Heat a little oil in a frying pan. Spoon the batter into the hot pan using a tablespoon and fry the pancakes until golden on both sides.
- Serve while still warm with your favorite toppings. 🤍
