This easy one pot chili is the best recipe for lunch or dinner. Instead of meat, I used beans and chickpeas so it’s also a vegan chili. It suits well for vegetarians as well. You can cook the best chili in one pot by adding simple ingredients and a cup of love. Or a cup of vegetable broth. I swear this is the most delicious chili you can make in 30 minutes.

- 1 ½ big purple onion
- 2 garlic cloves
- 1 tsp salt
- 1 ½ tsps black pepper
- 480 g mushrooms
- 400 ml tomato passata (watery)
- 140 g tomato pasta (thick)
- 720 g beans and chickpeas
- 1 tsp paprika powder
- ⅓ tsp cayenne paprika powder
- 1 tsp dried oregano
- 1 tsp cumin
- 500 ml vegetable broth
- 1 yellow bell pepper
- 1 red bell pepper
- oil for cooking
On top
- cilantro or parsley
- sour cream
- cheddar cheese
- jalapeño
One pot chili is on my autumn favorites list. I love cooking easy chili recipes that warm up your whole body and leave a spicy taste in your mouth. This chili recipe is something that I call “out of the fridge”. Because we are using last-minute ingredients from the fridge.

ONE POT CHILI FOR CHILLY EVENINGS
The meal I make the most often is soup. I like creamy soups, spicy soups, spicy chili soups, noodle soups, soups with pasta, and more. They are comforting, they smell well, and they must be eaten slowly. Maybe it sounds weird, but there is nothing better than a bowl of steaming spicy soup. And this one pot chili recipe is the one.
One of my main fears of having a food blog is offending someone’s culture/cuisine by making it “the wrong way” or mixing it with the wrong ingredients. That’s why many of my recipes are inspired by the original recipe because I don’t really know how the original meal should be made or how it really tastes. This one pot chili is made out of ingredients that would go bad soon. It’s suitable for vegans and vegetarians. You only need one pot, beans, tomatoes, and bell peppers. That’s what base is made of.

HOW TO MAKE the easiest ONE POT CHILI:
Cut onions into small cubes. Do the same with mushrooms and bell peppers.
Pour oil into the pot. Once it gets hot add onion. Fry it on low heat for 2 minutes. Then add black pepper, minced garlic, paprika powder, and salt and saute for another minute.
Add chopped mushrooms and cook until they get a little brownish. Add more oil if needed.
Pour tomato passata and add tomato puree into the pot. Cook for 5 minutes.
Add beans, chickpeas, sliced bell peppers, and vegetable broth, and cook for 20 minutes. Add spices for the best flavor. You can also use fresh chili peppers.
Serve with a tablespoon of sour cream, chopped cilantro or parsley, cheddar cheese, and jalapeño. Enjoy!
MY TIPS FOR THE BEST ONE POT CHILI RECIPE:
- you can use canned beans, chickpeas and lentils
- use fresh chili peppers
- garnish with chopped cilantro or parsley, it will rock your world
- add sour cream on top, it’s delicious
- use tomato puree, fresh tomatoes or tomato passata
- add as many spices as you like
