Honey Cake From Black Tea is an ultimately fluffy and sweet loaf cake you need to try. It’s dense but still soft. Its two main ingredients are honey and black tea. Honey cake is usually eaten on Rosh Hashanah (Jewish New Year). It is a symbol of hope for a sweet year to come. I loved every crumb of it. I hope you will love it too. This recipe was heavily inspired by the original Jewish honey cake.
Ingredients:
- 210 g flour
- 120 g brown sugar
- 120 ml oil
- 3 eggs room temp
- 170 g honey
- ½ mug of strong warm black tea
- 1 tsp vanilla extract
- 2 tsps baking powder
- a pinch of salt
- 1 tsp cinnamon
- ½ tsp nutmeg
HONEY CAKE IS A WIN WIN SITUATION
I’m gonna be honest – I was too excited about the autumn. I desperately wanted to eat a dessert full of comforting ingredients like honey, cinnamon, and nutmeg. We had a few gloomy and rainy days in Slovakia so I took it as a sign. To bake something comforting.
I had two full glasses of homemade honey in a kitchen cabinet. So I knew this was the main ingredient I really wanted to use in a new recipe. I came across a “Jewish New Year’s honey cake” on Google. It was basically an article about how different cultures/religions use honey for their traditions. I love how some Jews make a honey cake for New Year.
It’s usually eaten on Rosh Hashanah as a symbol of hope for a sweet year to come. I am not a Jew, so I don’t know all the correct ways on how it should be served/eaten, or if there are any strict rules about what other ingredients you cannot use. HOW TO MAKE THIS DELICIOUS LOAF CAKE:
Preheat the oven to 180°C. Prepare a loaf baking tin.
In a bowl mix together eggs, oil, honey, vanilla extract, and salt. Whisk well until the eggs are well combined.
Add sugar and whisk again for 1 minute.
Pour a warm ½ cup of strong black tea. Mix well.
Now add flour, baking powder, cinnamon, and nutmeg. Mix until the flour disappears. Do not over-mix!
Line a baking paper over the baking loaf tin. Pour a batter into the tin and bake for 40-45 minutes or until the toothpick comes out clean. Take the cake out of the oven and brush it with extra honey while it’s still hot.
I took the cake out of the tin after 20 minutes. Then let it cool completely. I swear the taste of it is even better on a second day. Enjoy!
