Gooey Chocolate Skillet Cookie Recipe is my new favourite thing to make. Forget chocolate chip cookies – make a whole skillet. I made this skillet cookie recipe suitable for pie pans. It’s loaded with melting chocolate, tastes like a salty chocolate dream, and goes well with a scoop of ice cream.
Ingredients:
- 200 g unsalted butter room temp
- 290 g granulated sugar
- 30 g vanilla sugar
- 300 g cake flour
- 1 ½ tbsp cornstarch
- 1 tsp baking powder
- 2 tsps baking soda
- ⅓ tsp salt
- 2 eggs room temp
- 1 egg yolk room temp
- 250 g chocolate
- extra chocolate on top and in the middle (150 g)
- 2 tsps vanilla syrup
The Gooey Chocolate skillet cookie recipe is everywhere. Especially when it comes to Valentine’s or finding desserts to share with others. I’ve never tried a skillet cookie recipe before. But I’ve always liked this dessert’s texture and the chocolate used in the recipes. Of course, I added more. To make sure it has the right balance of salt and chocolate (now I am lying). And it does (this is true). And it is perfection in a skillet (100%). And if you don’t have a skillet, no worries. You can use a pie pan as I did.
what is a Gooey Chocolate Skillet Cookie Recipe?
The short answer is it’s a cookie on steroids that you can share with friends. Or eat alone.
The long answer – it’s cookie dough baked in an iron skillet or in a pie pan. Or in any pan that can be put in the oven. It’s a sugary dough that is eaten with a big spoon, usually served with ice cream. You can literally add to it anything you would usually add to the cookie dough. Whatever chocolate, chocolate eggs, candies, etc.
hOW TO MAKE Gooey Chocolate Skillet Cookie Recipe:
In a bowl whip butter with sugars until creamy and fluffy. It can take up to 10 minutes. I recommend using a stand mixer.
Add eggs, vanilla, and yolk. Whip on high speed until the mixture doubles its size and gets very creamy.
Make sure you are using a dough hook for this step. Add flour, cornstarch, baking powder and baking soda. Mix on slow speed until every ingredient gets in. The dough should be very soft and sticky.
Chop up the chocolate into large pieces. Add them to the dough and mix for another 2 minutes.
Scoop the dough into the skillet or pie pan and spread it evenly. I threw some extra chocolate in the middle of the skillet for extra melting chocolate. Put some dough over the extra chocolate. Sprinkle the top with chocolate drops. Bake for 15-25 minutes. Take it out of the oven when it gets brownish. Let cool.
Serve warm with a scoop of ice cream. I recommend sprinkling with extra sea salt.
Can you reheat a skillet cookie?
Yes, you can. Cover it with aluminium paper and bake for 3-6 minutes. If you would like to eat your portion warm, put it in the microwave for a few seconds.
MY tips for the best Gooey Chocolate Skillet Cookie Recipe:
- whip properly – until creamy! just give it extra few minutes and make sure your butter with sugar is creamy. The same applies to eggs.
- use room temperature ingredients
- use a pie pan if you don’t have an iron skillet
- use A LOT OF CHOCOLATE – I promise you it gets unbelievably delicious
- sprinkle with sea salt after getting it out of the oven
- eat warm – or put it into the microwave before eating it
