Ingredients:
Starter:
- 75 ml lukewarm semi-skimmed milk
- 1 tsp granulated sugar
- 21 g yeast
- 1/2 tsp plain flour
Dough:
- 50 ml lukewarm semi-skimmed milk
- 35 g granulated sugar
- A pinch of salt
- 2 egg yolks
- 100 ml oil
- Juice of 1/2 lemon
- 250 g plain flour
Curd Cheese Filling:
- 250 g low-fat curd cheese (can also be full-fat)
- 1 egg yolk
- 12 g vanilla sugar
Crumble Topping:
- 80 g plain flour
- 50 g powdered sugar
- 50 g cold butter
- 20 g vanilla sugar
To Finish:
- Fabio jam
- 1 egg for brushing

How to make Curd cheese pastries with jam:
1. Preparing the Starter:
In a small cup (about 250 ml in volume), mix the lukewarm milk, sugar, yeast, and flour. Let the starter sit until it doubles in size.
2. Preparing the Dough:
In a bowl, mix the starter with sugar, flour, salt, egg yolks, oil, and lemon juice. Gradually add the oil and lukewarm milk and mix until the dough starts to pull away from the sides of the bowl. Let the dough rise in a warm place for about an hour.
3. Preparing the Curd Cheese Filling:
In a bowl, mix the curd cheese, egg yolk, and vanilla sugar. You can substitute this filling with poppy seeds or jam according to your preference. Chill the filling in the refrigerator.
4. Preparing the Crumble Topping:
In a bowl, mix the flour, powdered sugar, cold butter, and vanilla sugar. Rub the mixture between your fingers until it forms a crumbly texture.
5. Forming the Pastries:
Roll out the risen dough to a thickness of 0.5-1 cm. Cut the dough into squares with a knife. Place a spoonful of filling in the centre of each square. Pull opposite corners together and press the top with a glass to create a circle with space for the jam.
6. Finishing:
Brush the pastries with the beaten egg and sprinkle with the crumble topping. Bake in a preheated oven at 180°C (356°F) for about 15 minutes, or until the pastries are golden brown.
Store them in an airtight container to keep them fresh and soft. They are perfect for breakfast, as a dessert with coffee, or as a sweet treat for guests. Enjoy!
