Honey-glazed chicken orzo with ginger was my very spontaneous idea. I had chicken breasts in the fridge, 500 g of orzo in the kitchen and a jar of honey. I personally love anything with pasta (fun fact – I don’t eat pasta that often, maybe once in 6 months).
I honestly love spontaneous cooking ideas. Especially when there is no pressure – video-wise, aesthetically pleasing, etc. I adore weekend cooking in the evening. When no one is around, I have no responsibility to create a brand-new video recipe. That’s how this honey glazed chicken orzo with ginger was born.
how to make orzo?
In Slovakia, we call orzo “Slovak rice”. Orzo is a small rice-shaped pasta. First of all, wash the orzo in water, then boil it in salted water for a few minutes. If you add more water, cooking cream or chicken broth, you get a very creamy consistency like a creamy risotto.
my tips for the best chicken orzo:
- wash the orzo first (and always)
- use the juiciest parts of the chicken
- use A LOT of parmesan because it’s delicious
- if you pat dry the chicken before marinating, you get more crunchy chicken, if you decide to wash the chicken without pat drying, you will need to get rid of the excess water while frying. I chose the second option: I washed the chicken, marinated it, and fried it. In the middle of frying, I got rid of the excess water and just fried it for a couple more minutes until the sides got brown.
- be careful and DO NOT burn the honey
- stir orzo while cooking often so it doesn’t burn on the bottom
how to make Honey Glazed Chicken Orzo With Ginger:
Cut the chicken breasts into small pieces. Marinate them in olive oil, and season with salt, ginger powder, harissa, oregano and black pepper. Let marinate for 10 minutes.
Heat up butter on the pan and sprinkle with chilli flakes. Put pieces of chicken in butter and fry on both sides until brownish on medium-low heat. When the chicken gets brown on both sides, cover with honey and fry until golden on medium-low heat.
Take the chicken out of the pan. If the honey is not burnt on the pan, add butter, and chopped onion and fry for 1 minute. If the honey is burnt on the pan, wash it and continue cooking.
Add washed orzo and fry for a minute. Add chicken broth, and ginger powder, and cook until it’s soft (follow the instructions on the packaging – 10 minutes). Cover the pan and stir every minute so it doesn’t get burnt.
Pour whipping cream and spinach. Give it a good stir. Put pieces of chicken on top of the orzo, cover the pan and cook for 10 minutes on low heat.
Garnish with chopped parsley.
