Ingredients for Cinnamon Swirl Banana Bread:
Banana bread
- 2 ripe bananas
- 95 g melted butter
- 170 g brown sugar with 1 tbsp cinnamon
- 2 eggs room temp
- 1 tsp vanilla extract
- 75 g sour cream
- 220 g flour
- 1 ½ tsp baking powder
- chocolate chips
CInnamon swirl
- 25 g butter
- 5 tbsps brown sugar or until the consistency is thick
- 1 tbsp cinnamon
Banana bread is a magic dessert that saves you from throwing out bad bananas. But, what if you don’t need to wait for the bananas to be ripe? I know this hack – you make a few cuts into your bananas and microwave them for a few seconds (like 30-40 seconds). They get quite soggy, and warm and are perfect for a loaf of banana bread.
We all know the “boring version” of banana bread (but still delicious). You can add a handful of nuts, chocolate chips, or anything you can find in your kitchen. This time I was trying to find something that would make banana bread extra delicious, but using the ingredient you can easily find at home. That’s how the cinnamon swirl idea was born.

DENSE AND SOFT BANANA BREAD
Honestly, this was my 4th try. I made 4 banana loaves of bread. THEN I cracked the code and baked this dense (but not too wet, excuse me, moist) banana bread which is also on the softer side.
I like banana bread that you can get a good bite of. The one that tastes like a piece of cake but is still moist. It’s not dry, it’s not too cakey. This time I blessed the recipe with a cinnamon swirl made from melted butter, cinnamon, and brown sugar. What a blessing, seriously.
HOW TO MAKE BANANA BREAD:
Preheat the oven to 160°C. Prepare a loaf tin with baking paper in it.
Melt the butter and whip it with brown sugar and cinnamon until the consistency gets creamy (3-4 minutes).
Add eggs, vanilla extract smashed bananas, and sour cream. Mix with a whisker until it’s well combined.
Add flour, baking powder and whip until the flour disappears.
For the cinnamon swirl – mix in one bowl melted butter, brown sugar, and cinnamon. The main ingredient is melted butter, so keep on adding brown sugar until it gets really thick. Add cinnamon and mix again.
Into the loaf tin add a part of the banana bread mixture and a part of the cinnamon swirl mix. In the end, you should end up with layers of banana bread and a cinnamon mix. In the end, take a knife and move the batter around so the swirl can come to life. Sprinkle some chocolate chips over the top and bake for 1 hour – 1 hour and 15 minutes, or until the toothpick comes out clean.
Let the banana bread cool completely before cutting it.
