Strawberry Pound Cake is a delicious and sweet dessert full of strawberries and lemon zest. If you are a fan of pound cakes, this one will get into your top 3 for sure. It’s sweet and kinda sour. Sugar icing on top with chunks of strawberries. This pound cake is SO easy to make at home, so any home baker with “not so many” experiences can try to make this strawberry cake recipe.
INGREDIENTS:
- 120 g unsalted butter
- 220 g regular white sugar
- 3 eggs
- 235 g cake flour plus extra for strawberries
- 2 tsps vanilla extract
- 85 g full fat greek yogurt
- 1 tsp baking powder
- 25 g lemon zest or more
- lemon juice from 2 lemons
- 150 g fresh chopped strawberries
Strawberry icing
- 140 g icing sugar
- 150 g diced strawberries
- 3 tbsps water with a few drops of lemon juice/ or only lemon juice
This strawberry cake recipe is so easy and quick to make. I made two strawberry pound cakes in small cake tins. You can also use one pound cake tin with the same amount of ingredients as well.
I am a huge fan of easy cakes in under 1 hour. Lemon Pound Cake is my absolute favorite dessert in the whole world. Very summer-like, tasty, sour but also SO sweet. However, I wanted some change. The glow up for the lemon cake.
I had a few strawberries at home and a busy schedule. I was meeting my girlfriends at 6 pm but also decided to make a new recipe at 2 pm. It doesn’t sound that bad but trust me – it was. Recipe testing sometimes takes 1 hour and sometimes it’s a two-day thing. In this case, I had to be quick and make sure that everything is properly creamed, whisked, melted, and cool.
Thank God, the strawberry cake recipe was a chef’s kiss. And my friend loved it. 🥰

STRAWBERRY POUND CAKE AT HOME
This strawberry pound cake is delicious. It didn’t need any extra ingredients. You can basically make it from scratch if you have strawberries and lemons at home.

But what do you really need for this simple strawberry cake?
Room temperature ingredients – if you want to cream your butter or whisk it with sugars, room temperature ALWAYS, please.
Thick sugar icing – make the strawberry sugar icing thick. The mean thing about this icing is that it can look thick but it does not stay on the cake. Eventually, you end up with the sticky icing kitchen. Make sure you use enough icing sugar.
Let the strawberry pound cake cool – the number one rule. Do not ever manipulate with hot/warm cakes. Cool cake holds its form, and does not “drink” the liquids you pour on top of them.

Strawberry Pound Cake
Ingredients
- 120 g unsalted butter
- 220 g regular white sugar
- 3 eggs
- 235 g cake flour plus extra for strawberries
- 2 tsps vanilla extract
- 85 g full fat greek yogurt
- 1 tsp baking powder
- 25 g lemon zest or more
- lemon juice from 2 lemons
- 150 g fresh chopped strawberries
Strawberry icing
- 140 g icing sugar
- 150 g diced strawberries
- 3 tbsps water/lemon juice
Instructions
- Preheat the oven to 170°C. Prepare one pound cake tin (regular size) or 2 smaller pound cake tins. Butter up the tin and attach the attachment paper to it.
- Start with creaming butter and sugar. Firstly, rub the 1/2 lemon zest into the sugar with your fingers. Whisk the butter and sugar with an electric mixer on high speed for 3 minutes. You should end up with creamy and soft consistency in the mixture.
- Continue by adding eggs, one at a time. Whisk on medium speed and scrape the sides of the bowl when needed. Mix until the batter is runny and creamy.
- In one bowl mix flour with baking powder and lemon zest – whisk with an egg whisker. Into another bowl add yogurt with lemon juice, and vanilla extract.
- The next step is crucial – start by adding 1/3 flour mixture into the batter, while mixing on low speed. Then add 1/2 yogurt liquid. When it's well combined, add flour mixture, mix, yogurt mixture. In the end, add the rest of the flour mixture. Don't forget the scrape down the sides of the bowl while the batter is mixing.
- Now, I recommend tasting the batter if it's lemony enough. If not, you can add more lemon zest or lemon juice. However, in this case, don't forget to add a little bit of flour and combine it with a spatula (2 tbsps of flour).
- Chop the strawberries and cover them in a little bit of flour. Fold the strawberries into the batter. Pour the batter into the pound cake tin and bake for 45-50 minutes or until the wooden toothpick comes out clean.
- Take cake out of the oven and let cool in the tin for 10 minutes. Then take it out and allow to cool for the next 30 minutes.
- Cook the strawberries in the pan for 10 minutes. They should get soft and watery. You can use this liquid for the sugar icing.
- Prepare the icing sugar into the bowl. Pour the water with a few drops of lemon juice and strawberry liquid. Mix with an egg mixer until it's well combined. The icing should be thick enough to stay on the cake. In this case, use more icing sugar. Put the cooked strawberries on top.
