The Best Gingerbread Cookie Recipe

Ingredients
  

  • 400 g cake flour
  • 150 g icing sugar
  • 2 eggs
  • 60 g unsalted butter
  • 100 g honey
  • 1 tsp gingerbread spice mix
  • 1 tsp baking soda

Method
 

  1. Add the ingredients to a bowl. Make a silk, soft dough and let it rest in the fridge for 24 hours (or overnight).
  2. Preheat the oven to 180°C. Prepare baking sheets with baking paper.
  3. Roll out the dough to the sides and cut it into Christmas shapes. Put on the baking sheet and bake for 7-8 minutes. Take the gingerbread cookies out of the oven. Brush with a yolk mixture (1 yolk and 1 tsp of water). Let it cool completely.
  4. Enjoy!
