Method
- Preheat the oven to 180°C. Prepare a regular big size baking tray. Use baking paper as well.
- Mix the eggs, egg white, and sugars until the mixture gets creamy on high speed in a bowl. It can take 4 minutes. Add oil, strawberry jam, and vanilla extract. Whisk until well combined – for 4 minutes.
- Add flour and baking powder. Whisk until the flour disappears. Do not over-mix! Pour the batter into a baking tray and bake for 25-30 minutes or until the toothpick comes out clean. Take the strawberry sheet cake out of the oven and let cool in the baking tray.
- While the strawberry sheet cake is warm, spread some strawberry jam over it. Let the cake cool completely.
Cream Cheese Layer
- Whip the room temperature cream cheese or mascarpone until it's super creamy. Spread it over the cake and let cool in the fridge for at least 3 hours.
