Poppy Seed Buns with Crumble

Ingredients
  

Dough:
  • 500 g all-purpose flour
  • 70 g granulated sugar
  • 3 egg yolks
  • pinch of salt
  • juice of 1/2 lemon
  • 200 ml oil
Yeast starter:
  • 140 ml warm semi-skimmed milk
  • 40 g fresh yeast
  • 1 tsp sugar
  • 1 tsp flour
Poppy seed filling:
  • 400 g ground poppy seeds
  • 16 tbsp powdered sugar adjust to taste
  • 300 ml semi-skimmed milk
  • 100 g butter
Crumble topping:
  • 150 g all-purpose flour
  • 100 g powdered sugar
  • 100 g butter
  • 1 packet vanilla sugar

Method
 

Prepare the yeast starter:
  1. In a cup, mix warm milk, yeast, sugar, and flour. Stir gently and let it rise for about 15 minutes.
  2. In a large bowl, combine flour, sugar, egg yolks, salt, and lemon juice. Add the yeast starter.
  3. Slowly pour in the oil while mixing. Knead for about 10 minutes until a slightly sticky dough forms.
  4. Cover and let rise for 1 hour.
Filling:
  1. In a saucepan, cook poppy seeds with powdered sugar and milk for about 6 minutes.
  2. Add butter, remove from heat, and stir until melted. Let cool slightly.
Shaping:
  1. Transfer dough onto a floured surface and roll into a rectangle (about 1.5 cm thick).
  2. Divide into 18 equal pieces and shape into balls.
  3. Flatten each one and add poppy seed filling in the center.
Crumble:
  1. Mix all crumble ingredients and press together with your fingers.
Baking:
  1. Place buns on a baking tray, brush with an egg, sprinkle with crumble, and optionally add strawberries on top.
  2. Bake at 180°C (350°F) for about 15 minutes until golden.
