White Chocolate Peppermint Cookies are sugary cookies covered in white chocolate and in crushed Christmas peppermint candy. They are soft peppermint cookies with crunchy edges that will “jingle bell” the way into your heart. These will be on your wishlist if you are a fan of the thin soft cookies.
Ingredients:
- 115 g melted butter
- 210 g flour
- a pinch of salt
- 1 tsp baking soda
- ½ tsp baking powder
- 170 g regular white sugar
- 20 g vanilla sugar
- 1 tsp vanilla syrup
- 1 egg
- 200 g chopped white chocolate
Coating
- 200 g melted white chocolate
- crushed peppermint candies
White chocolate peppermint cookies look like a perfect Christmas snack. They are sugary, soft and crunchy at the same time. The secret to a perfect thin cookie is to get it out of the oven underbaked in the middle and let it continue baking on the baking sheet.
HOW TO MAKE THE BEST COOKIES?
There are a few things that can ruin your cookie game. These are the problems I went through:
- temperature is too high – cookie dough will melt in the oven and you end up with burned paper-thin dough. I recommend baking cookies at a lower temperature and finishing baking them on the hot baking sheet out of the oven.
- cookie dough is too runny – if your cookie dough is missing flour, it will melt in the oven and won’t hold its form. Add more flour.
- the middle of the cookie is underbaked – for the soft cookies with crunchy edges, you need to leave the cookie slightly underbaked.
- adding more chocolate drops than a recipe calls for – it’s always that. Add more chocolate, every single time.
How to make White Chocolate Peppermint Cookies:
Preheat the oven to 150°C. Prepare two baking sheets and baking papers.
In a bowl whip melted butter with sugar. You can do it with a mixer or use an egg whisker (like me). Whisk until creamy.
Add vanilla syrup and an egg. Whisk again until combined. In another bowl whisk flour, baking soda, a pinch of salt, and baking powder. Add into the mixture and mix with a spatula until the mixture is thick like cookie dough. If it’s not thick enough, add more flour.
Chop up the white chocolate and add it to the cookie dough. Fold in with a spatula.
This cookie dough doesn’t need to go to the freezer before baking. Scoop up a ⅓ tablespoon of cookie dough and put it on the baking sheet. I don’t recommend putting more than 3 cookies on a baking sheet. Bake for 10 minutes. Get them out of the oven and leave them on the baking sheet for another 10 minutes to bake. Cookies should be slightly underbaked. Let them cool completely.
Coating
Melt white chocolate in a microwave or in a bowl over boiling water. Chop up peppermint candy. Pour white chocolate over the cookie and sprinkle with crushed peppermint candy pieces.
