Mango cheesecake bars are moist, and juicy and get even better after two days. These mango bars are made out of mango jelly, mascarpone cheese and fresh slices of mango. They are soft, delicious, cold and creamy. You can make them in two hours and enjoy the sweetest dessert.
INGREDIENTS:
Cake layer
- 220 g butter room temp
- 250 g regular white sugar
- 2 eggs room temp
- 1 tsp vanilla syrup
- 1 tsp baking powder
- 250 g flour
Cheesecake layer
- 300 g mascarpone cheese room temp
- 60 g sour cream room temp
- 90 g regular white sugar
- 8 g flour
- a pinch of salt
- 1 tsp vanilla syrup
- 2 eggs room temp
- 6 tbsps ALLNUTRITION PASSION FRUIT & MANGO IN JELLY
- slices of fresh mango
Mango cheesecake bars are delicious. I was surprised when I first tried them. The cheesecake bars are not my favourite dessert as I am not a huge fan of cold desserts. But this one was amazing. And not only that. It got better on the third day! For real.
what are mango cheesecake bars?
Moist, soft and creamy bars with two layers – a cake layer and a cheesecake layer. They are cold, sweet, and delicious.
I wanted to make those cheesecake crust bars with baked mascarpone cheese on top. But then I quickly changed it to “overbaked blondies” aka a normal cake layer that gets very moist and juicy in the fridge. That’s what I love doing when it comes to baking a cold dessert.
I poured whipped mascarpone cheese with sour cream on top. To make them extra sweet and juicy, I used ALLNUTRITION PASSION FRUIT & MANGO IN JELLY for nice swirls.

HOW TO MAKE MANGO CHEESECAKE BARS:
Cake layer
Preheat the oven to 160°C. Prepare a baking tray (20x20cm) and baking paper.
In a bowl whisk butter and sugar until creamy. Add vanilla syrup, and eggs and whip again until the ingredients are well combined.
Add flour, a pinch of salt and baking powder. Whisk them with the mixture until smooth. Be careful and do not over-mix! Mix until the flour disappears. Pour the batter into the baking tray.
Cheesecake mango layer
In another bowl whisk mascarpone, sour cream and sugar until creamy.
Add eggs, vanilla syrup, and salt, and mix again. In the end, add flour and mix until the flour disappears.
Slice up the fresh mango. Put slices on top of the batter. Pour the cheesecake mix over it.
In the end, put tablespoons of ALLNUTRITION PASSION FRUIT & MANGO IN JELLY on top of the cake and make swirls with a butter knife or a toothpick.
Bake for 30-35 minutes or until the cheesecake layer gets a little brown. Take the cake out of the oven and let cool completely. When the cheesecake gets cool, put it in the fridge for 2 hours to set properly.
