Lime Bars Without Condensed Milk is a cold, refreshing, and fresh dessert you can make and eat on the same day. Keep the bars in the fridge for a few hours and you get a perfect square lime bar with a kick of lime and lemon. Sprinkle some icing sugar over them and enjoy hot summer days.
Ingredients:
- 2 packages lemon grass pudding powders 2 x 38 g
- 1 package lemon pudding powder 38 g
- 1 ½ l semi-fat milk
- 4 tbsps regular white sugar
- juice from 1 lime
- icing sugar on the top
- slices of lime on the top
Crust
- 135 g butter
- 300 g butter – graham crackers
Lime Bars Without Condensed Milk is easy to make. The recipe is SO simple that everyone can make it at home. These squares are soft, cold, icy (like icy, wifey, haters wanna fight me). They are just everything you need and crave during the hot summer days (hot summer nights, mid-julyyyyy) – okay, that’s enough references, you get it.
With this climate change happening and getting worse EVERY YEAR, we are craving more and more cold desserts. the main inspiration – cold mojito
I don’t even know if there is something more “summer-iconic” than a tall glass of cold mojito with brown sugar, chunks of lime and lemon, and ice cubes. I like the image of a wet cold glass with the most refreshing taste.
A glass full of cold mojito was my main inspiration for this dessert. On hot days like these, I only want to drink ice cold drinks and do nothing. Same with the food. I don’t remember when was the last day I ate hot soup.

HOW TO MAKE LIME BARS:
Prepare a baking sheet of 33 x 20 cm. Make sure it’s deep enough, and you can get it into the fridge.
Crush the butter – graham crackers in the food processor until the crumbs are very fine. Mix them with butter and push them into the baking sheet with a spoon. The consistency should be sticky but not too greasy. Keep the baking sheet in the fridge.
In one pot get the milk cooking. Make the puddings in one pot – cook them by following the instructions on the packages.
Let the pudding cool for 1 hour by stirring occasionally (it must be still runny). Then pour the pudding over the butter crust. Make sure the surface is clean and flat with no bubbles.
When the pudding is fully cool, keep it in the fridge for at least 3 hours. Then cut the dessert into squares or the shape of the bars. Sprinkle with icing sugar (or regular white sugar if you don’t mind the crunch) before serving.
