Lemon cake with whipped icing is a sweet-lemony dessert with the softest cake layer. It’s a sheet cake you can pour into a baking pan and cake for a few minutes. Add a few chia seeds and you get this fancy piece of cake.

Ingredients:
- 4 eggs
- 1 egg white
- ½ mug brown sugar
- ½ mug granulated sugar
- ⅓ mug vanilla sugar
- 170 g sour cream with a few drops of lemon juice
- ¾ mug oil
- 2 mugs cake flour
- 2 tsps baking powder
- 1 tbsp chia seeds ALLNUTRITION
Lemon syrup
- juice from 1 lemon
- 4 tbsps icing sugar
Cream
- 150 g mascarpone cheese
- 90 g unsalted butter
- 400 g icing sugar
Lemon cake with whipped icing is one of the most lemony desserts I’ve ever made. The vanilla cake layer is the softest and most flavourful one on this Earth. It’s super easy to make and you can literally use whatever cream on top. Use whipped cream, cake icing or make whipped mascarpone icing as I did. I also used lemon curd on top to make things extra pretty.
To make this lemon cake extra, I added 2 tablespoons of chia seeds. You can add poppyseed, walnuts, or anything you like. But – I have to say – the chia seeds look nice one it was cut into pieces.
HOW TO MAKE LEMON CAKE WITH WHIPPED ICING:
Preheat the oven to 180℃. Prepare a deep baking sheet (I used 27×34 cm).
Mix the eggs, egg white, sour cream with lemon drops, and sugars until the mixture gets creamy on high speed in a bowl. It can take 4 minutes. Add oil and vanilla extract. Whisk until well combined – for 4 minutes.
Add flour, chia seeds and baking powder. Whisk until the flour disappears. Do not over-mix!
Pour the batter into a baking tray and bake for 25-30 minutes or until the toothpick comes out clean. Take the lemon cake out of the oven and let cool in the baking tray.
Syrup
Heat juice of 1 lemon in a pan. Add icing sugar and mix well. While the cake is still hot (15 minutes after you took it out of the oven), poke some holes into the cake. Pour the lemon syrup over the cake. I used only half of the liquid. Let cool completely.
Cream
In another bowl cream the butter with mascarpone cheese with a paddle attachment. Add icing sugar and on low speed for 8 minutes or more.
