Ingredients:
Homemade pesto
- ½ avocado
- ½ mug fresh basil
- 4 cloves garlic
- lime juice from 1 lime
- 1 tbsp almond flakes / or whole almonds
- ⅓ mug olive oil
- 2 tbsps parmesan cheese
- ½ tsp salt
- a pinch of black pepper
Pasta salad
- 500 g farfalle pasta
- 200 g cherry tomatoes
- 1 big red onion
- 2 green bell peppers
- 1 whole spring onion
- 1 can canned corn
- 3 small red radishes
- a pinch of salt
- lime juice from 1 lime
- a pinch of black pepper
- 200 g mozzarella
The sweet time of cold meals has begun. I am more than excited about heading into the season of cold dishes, salads, homemade salad dressings, and colorful meals. I am not a huge fan of summer but I am a huge fan of food. Fruits and veggies are usually cheap, and watermelons are sweet and delicious. It screams happiness and joy, haha.
One evening, I was saving pictures on Pinterest when this beautiful huge bowl of pasta landed on my browsing page. OMG. I was in love, I could definitely taste the garlicky flavor of this pasta dish that was blessed with a great amount of olive oil and freshly minced garlic. My mouth was watering af.

So my last-minute plan was to boil some pasta, which was sitting in my kitchen drawer for way too long, Delicious farfalle pasta. Boiled for a few minutes, chopped up some veggies that were also just chilling in the fridge for a few days. So this was an absolutely lazy idea, a last-minute dinner.
I was also craving this garlicky flavor that was still on my mind. So I made homemade pesto. Few green veggies, fresh basil which is FINALLY growing on my window, lime juice (because I didn’t have any lemons in the house at that time), olive oil, and GARLIC.
Oh boy. Delicious. Heaven. Angels were singing, I swear. I just put everything into a huge bowl and gave it a good stir. Sprinkled extra parmesan cheese over my portion. We finished this bowl on next day. So, when I tell you, it’s worth it – it is!
How to make cold pasta salad with homemade pesto?
Start with boiling the pasta for 12-15 minutes or follow the instructions on the package. Let the pasta cool for a few minutes. Prepare a huge bowl.
In the meantime, chop up the vegetables you chose for this salad. Also, cut the mozzarella into small cubes.
In the food processor mix avocado, olive oil, fresh basil, garlic, lime juice, almonds, parmesan cheese, salt, and black pepper. Mix on high speed until the pesto is smooth.
Into the bowl put pasta, chopped vegetables, mozzarella cubes, salt, black pepper, lime juice, and fresh pesto. Give it a good stir.
Serve with extra parmesan cheese on top and for more protein add tuna.
