Chocolate Zucchini Bread is sweet, soft, cakey, and full of chunks of chocolate. You cannot even taste a zucchini but it still adds juiciness to the bread. Chocolate bread is also fudgy so you can have it with a scoop of vanilla ice cream and enjoy the best dessert on the Earth. Who wants to try it?
INgredients:
- 2 zucchinis
- 250 g flour
- 2 tsps baking powder
- a pinch of salt
- 2 tsps vanilla extract
- 100 g regular white sugar
- 180 g brown sugar
- 20 g caramel sugar (of brown sugar)
- 60 g melted butter
- 40 g olive oil
- 250 g chopped chocolate
- 50 g cocoa powder
- 100 g melted white chocolate
- almond flakes on top
- 3 eggs room temperature
This is not the “healthy zucchini bread” recipe just because we threw some veggies into the dessert and used brown sugar. Please, stop labeling desserts as healthy, fit, and fitness because of the products you used. I absolutely hate when people use oats for baking (or cooking) and automatically label it as healthy. If you don’t have any intolerances – eat whatever cakes, cupcakes, chocolate, or butter until you are full. Move your body, drink water and always make time to eat fresh veggies. Health is about balance. Health is also about taking care of your mental health and physical health.
Also, naming low-calorie recipes “healthy” doesn’t lead to a healthy human being. It leads to eating disorders. I remember when people were obsessed with “healthy cakes” and baked really awful desserts. It tasted like shit, it looked terrible. But people made them because others called them “no regrets cakes, fit cakes, healthy cakes”. Regrets are about mental health, not about your stomach not being healthy.
So please, eat whatever you like. Be on a healthy diet – eat veggies, drink water, stop eating when you are full, and fall in love with some activity. Take care of your mental health, so you don’t end up eating oats covered in dark chocolate on Friday night, because what you really want is Kinder Bueno. However, oats are healthy…

Now back to the recipe. I bought some zucchini on sale in Lidl. I had extra cooking chocolate bars in the kitchen so I very quickly decided to bake something sweet that contains zucchini. So, zucchini bread loaded with chocolate it was.

Hot to make zucchini bread
Preheat the oven to 180°C. Prepare a bread pan or 2 smaller bread pans with baking paper.
Peel zucchini and grate them finely on the cheese grater. Press the zucchini to release some of the moisture.
Whisk butter, oil, and vanilla extract with sugars. After 4 minutes of whisking add eggs and whisk for another 5 minutes.
Add flour, baking powder, cocoa powder, and salt. At this point use a wooden spoon to work with a very thick mixture. Just stir until the flour disappears. When the mixture is well stirred, add grated zucchini and stir again. After a few minutes, the mixture starts to release some moisture so it becomes less thick and will be runnier. Add chopped chocolate and stir well.
Pour the mixture into the bread pan. Sprinkle some almond flakes over the loaves of bread. Bake for 45-60 minutes. I baked mine in 2 small bread pans for 50 minutes.
Take the bread out of the oven and let cool completely. When the bread is cool, pour some cool melted white chocolate over it. Enjoy!
