Chicken in blue cheese sauce is such a simple and quick recipe. And you don’t even need an original blue cheese for it! The meal is creamy, salty, cheesy and delicious. It takes 45 minutes to make this stunning main course. Would you like a bite?

Ingredients:
- 1 kg chicken breasts
- 150 ml whipping cream
- 100 g blue cheese (or processed cheese/spread)
- a handful of parsley
- 3 tsps salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 garlic clove
- 1 small red chilli pepper
- 1 shallot
- 3 tbsps olive oil
- 2 tsps chilli flakes
- ½ tsp paprika powder
Chicken in blue cheese sauce was a very spontaneous idea. I served this dish with Parmesan potatoes, which was the original recipe for a blog. And because there was about one kilogram of chicken breasts in the fridge – I decided to make some chicken pieces in olive oil and seasoned them with some ordinary seasoning. Nothing special.
However, I still had this beautiful sunlight in the kitchen and it would be dumb to waste it (in the middle of January, come on?!). So I looked at what other ingredients my fridge has to offer. I found a processed blue cheese spread and whipping cream. And that’s how the Chicken in blue cheese sauce was born.
wHAT IS BLUE CHEESE SAUCE MADE OF?
It’s a combination of blue cheese and something creamy like mayonnaise, heavy cream, sour cream etc. You can season it with salt, black pepper, lemon juice and others.
For my blue cheese sauce, I used processed cheese with blue cheese flavour (those cheeses you can spread over the slice of bread – Niva, I used this exact one). However, you can use an original blue cheese they sell in your local store or any cheese (like parmesan) if you’re not a fan of blue cheese.
CHICKEN IS LOOKING RAW
When I was making this dish, the chicken pieces looked quite raw. Like those unseasoned chickens, you can see all over the internet that others are just mocking. I was terrified of what would people say about it..
The catastrophe was over when I let the chicken really cook until done – when the sides were looking healthy brownish and it was also (surprisingly) smelling really good. It was not strong, but very neutral, perfect for a strong cheesy sauce.
So if you are afraid you made a mistake and this is looking terribly, hold on. Let the chicken fry properly, and make sure it’s soft before taking it out of the pan. Keep in mind, it will cook in a cheese sauce later.
How to make Chicken In Blue Cheese Sauce:
Wash and cut the chicken breasts into small pieces. You can also keep them large and thick (like I did) but it will take more time to cook.
Season the chicken with olive oil, salt, black pepper, garlic powder and chilli flakes. Cover the chicken breasts with them and make sure the seasoning is everywhere. Put the meat aside for 3 minutes.
Heat the pan with olive oil and fry the chicken pieces on each side until brownish. It can take 10 minutes on each side – it can also look raw and unseasoned (trust me, even I was sceptical) but it’s worth the wait. Fry it slowly on low-medium heat until brownish and soft. Take the pieces out of the pan.
Chop up the garlic, shallot, and red chilli pepper. Throw them into the same pan and fry for about one minute. Add whipping cream, and paprika powder, blue cheese (spread or parmesan cheese), and give it a good stir. Cook for 2 minutes. Taste the sauce and if needed add black pepper and salt.
Put the chicken into the pan, sprinkle over some parsley, and cover it with a lid. Cook for another 5 minutes on low heat.
