Cherry Cake With Rum is an old-fashioned cake full of chocolate cream and cherries soaked in rum. Perfect for any occasion, celebrations with friends or parties. A piece of this cake would go well with a cup of coffee or even a glass of red wine. Not a fan of rum? Add any alcohol you like.
Ingredients:
Cake
- 200 g cake flour
- 2 tsp baking powder
- a pinch of salt
- 180 g greek yogurt room temp
- juice from ½ of lime
- 70 g unsalted butter room temp
- 210 g regular white granulated sugar
- 30 g vanilla sugar
- 65 ml oil
- 3 large eggs room temp
- 2 tsps vanilla extract
- 90 g chocolate drops
- 2 tbsps cherry jam
Buttercream
- 85 g unsalted butter room temp
- 120 g icing sugar
- 5 tbsps cocoa powder
- 2-4 tbsps milk
- 4 tbsps rum
Cherries with rum
- 150 g cherries
- 5 tbsps rum
This chocolate cherry cake with rum is definitely a great dessert for lovers of cherry truffles, cherry boxes of sweets, and rum in general. Father’s day is coming up in Slovakia in a few days, so I made this cake for my dad. He loves dark chocolate, cherries, and sweet cognac.
It’s cherry season so this cake is super affordable. You can also use a cheap rum or other liquor you like.
The original thought behind this cake was to use soft cake layers as I did for Fresh Strawberry Cake With Poppy Seeds, but then I changed my mind and came up with more dense cake layers that make this cherry cake chunky, thick, and go well with rum buttercream. And I don’t regret it! 😊

Tasty and stunning! This cake is super easy. Moist. Full of rum. Cherries. Chocolate. It has the best of both worlds.
I started to bake this cake around 10:30 AM. I thought I would only bake the cake layers and finish the rest the next day. To be honest, I was just annoyed by making another layer cake because let’s be honest – layer cakes can be ridiculously annoying. You have to wait for the cakes to cool, make a cream, and be careful to not overmix the whipping cream.. And let it chill in the fridge for hours.
HOWEVER, this cake is not annoying at all. After 3 hours (chilling in the fridge included) I was eating a piece of cake. Easy. So trust me – it is easy, simple and you can make it at home. Cherry cake with rum, this is it.
How to make cherry cake with rum
Cake
Start by chopping the cherries. Put them into a bowl and pour some rum into the bowl. Cover with a foil and put into the fridge for at least 1 hour.
Preheat the oven to 180°C. Prepare 2 cake pans (diameter 18 cm), line with baking paper, then grease the sides. Using baking paper helps to release the cake from the pans.
Mix the butter with sugars on high speed for 5 minutes. Then add oil and mix until the mixture is pale and fluffy and double its size.
Add the eggs and vanilla extract. Mix on high speed for 3 minutes.
In one bowl whisk together flour and baking powder with a pinch of salt. Prepared a second bowl, and pour the greek yogurt in with lime juice. Mix well.
Add ⅓ of dry ingredients and mix on medium speed until the flour disappears, then pour ½ of yogurt and mix again until it’s fully absorbed. Repeat the process. The dry ingredients should be last added.
Fold in chocolate drops with a rubber spatula.
Bake for 30-40 minutes or until the toothpick comes out clean. Take them out of the oven and let in the cake pans for about 15 minutes. Get them gently out of the cake pans and let cool completely.
Once the cakes are cool, spread cherry jam on top of one of the cakes. You can add more cherry jam if it’s your favorite one.
Buttercream
Whisk the butter with icing sugar until soft. Then add cocoa powder and give it a good whisk.
At this point, you can add rum and milk to make the buttercream less thick.
Spread some buttercream on top of the cake with jam on, a ½ cm layer, and put soaked rum cherries on top as well. Put the second cake on top.
Cover the top and sides of the cake with chocolate buttercream. Sprinkle some cocoa nibs on top as well.
Put into the fridge overnight or for at least 3 hours.
