Ingredients

  • 120 g melted unsalted butter
  • 220 g brown sugar
  • 160 g chopped chocolate
  • 110 g flour
  • ½ tsp baking powder
  • 30 g cocoa powder
  • 2 eggs
  • 1 egg white

Chocolate Icing

  • 120 g unsalted butter room temp
  • 130 g icing sugar
  • 20 g cocoa powder
  • 3 tbsps hot water
  • Dr. Oetker sugar decorations

Instructions

  • Preheat the oven to 165°C. Prepare a baking tray (23 x 28 cm) with baking paper.
  • Start by melting butter in the microwave (for 30 seconds) or on the stove. When the butter starts to be runny and warm, add brown sugar and mix well with an egg whisker (do not whip it). Now, get the butter with sugar back into the microwave or on the stove, and heat up for 40 seconds. Mix again.
  • Chop the chocolate and add to the warm butter mixture. Mix again until the chocolate is completely melted. Once it's combined well, add eggs and egg yolk. Mix again. Add flour, baking powder and cocoa powder. Stir the dry ingredients in with a rubber spatula.
  • Pour the brownie mix on the baking sheet and bake for 25-30 minutes. When you get them out of the oven they should be still a little jiggly. Let them cool on the baking sheet for 20 minutes and then let them out to cool completely.

Chocolate icing

  • In a bowl whisk butter, icing sugar, and cocoa powder with hot water. Whisk until silk and smooth. Pour on top of the cool brownies and spread over the top. Put sugar decorations on top.
