- 400 g cake flour
- 150 g icing sugar
- 2 eggs
- 60 g unsalted butter
- 100 g honey
- 1 tsp gingerbread spice mix
- 1 tsp baking soda
Add the ingredients to a bowl. Make a silk, soft dough and let it rest in the fridge for 24 hours (or overnight).
Preheat the oven to 180°C. Prepare baking sheets with baking paper.
Roll out the dough to the sides and cut it into Christmas shapes. Put on the baking sheet and bake for 7-8 minutes. Take the gingerbread cookies out of the oven. Brush with a yolk mixture (1 yolk and 1 tsp of water). Let it cool completely.
