Oreo Crust
- 30 crushed Oreo cookies
- 4 tbsps melted butter
Cheesecake
- 350 g NUTLOVE crispy cookie cream room temp
- 500 g mascarpone cheese room temp
- 100 g icing sugar
- 350 ml cold whipping cream
- cream stiffener
- crushed Oreos
Chocolate ganache
- 200 g chocolate
- 100 g cooking cream
- Oreos on top
Oreo Crust
Prepare a cake form with a diameter of 25 cm.
In a food processor crush the cookies until they have a consistency of flour. In a bowl melt the butter. Mix these two ingredients with a fork. Push down into the bottom and sides of the cake form. Put it in the fridge for now.
Cheesecake
In a bowl, whip the mascarpone cheese and NUTLOVE crispy cookie cream. Add icing sugar and whip again.
In another bowl whip the whipping cream with a cream stiffener on high speed. Be careful, do not over-mix! Transfer the whipped cream to the bowl with a rubber spatula. Fold in carefully.
Pour ½ of the cheesecake mix into the cake form with crust. Sprinkle over the mixture some crushed Oreos. Add the rest of the cheesecake mixture. Put into the fridge for at least 5 hours or overnight.
Chocolate ganache
Melt chocolate and cooking cream in separate bowls. Add warm cooking cream to the bowl with melted chocolate. Mix with a fork until it's thick. Let it cool.
Pour the ganache on top of the cheesecake. Let it cool completely before putting it in the fridge. Let it refrigerate for 1-2 hours.
