Cherry Cake With Rum

An easy recipe for a Cherry cake with rum.

Ingredients
  

Cake

  • 200 g cake flour
  • 2 tsp baking powder
  • a pinch of salt
  • 180 g greek yogurt room temp
  • juice from ½ of lime
  • 70 g unsalted butter room temp
  • 210 g regular white granulated sugar
  • 30 g vanilla sugar
  • 65 ml oil
  • 3 large eggs room temp
  • 2 tsps vanilla extract
  • 90 g chocolate drops
  • 2 tbsps cherry jam

Buttercream

  • 85 g unsalted butter room temp
  • 120 g icing sugar
  • 5 tbsps cocoa powder
  • 2-4 tbsps milk
  • 4 tbsps rum

Cherries with rum

  • 150 g cherries
  • 5 tbsps rum

Instructions
 

Cake

  • Start by chopping the cherries. Put them into a bowl and pour some rum into the bowl. Cover with a foil and put into the fridge for at least 1 hour.
  • Preheat the oven to 180°C. Prepare 2 cake pans (diameter 18 cm), line with baking paper, then grease the sides. Using baking paper helps to release the cake from the pans.
  • Mix the butter with sugars on high speed for 5 minutes. Then add oil and mix until the mixture is pale and fluffy and double its size.
  • Add the eggs and vanilla extract. Mix on high speed for 3 minutes.
  • In one bowl whisk together flour and baking powder with a pinch of salt. Prepared a second bowl, and pour the greek yogurt in with lime juice. Mix well.
  • Add ⅓ of dry ingredients and mix on medium speed until the flour disappears, then pour ½ of yogurt and mix again until it's fully absorbed. Repeat the process. The dry ingredients should be last added.
  • Fold in chocolate drops with a rubber spatula.
  • Bake for 30-40 minutes or until the toothpick comes out clean. Take them out of the oven and let in the cake pans for about 15 minutes. Get them gently out of the cake pans and let cool completely.
  • Once the cakes are cool, spread cherry jam on top of one of the cakes. You can add more cherry jam if it's your favorite one.

Buttercream

  • Whisk the butter with icing sugar until soft. Then add cocoa powder and give it a good whisk.
  • At this point, you can add rum and milk to make the buttercream less thick.
  • Spread some buttercream on top of the cake with jam on, a ½ cm layer, and put soaked rum cherries on top as well. Put the second cake on top.
  • Cover the top and sides of the cake with chocolate buttercream. Sprinkle some cocoa nibs on top as well.
  • Put into the fridge overnight or for at least 3 hours.
