Cold Pasta Salad With Homemade Pesto

An easy recipe for Cold Pasta Salad With Homemade Pesto.

Ingredients
  

Homemade pesto

  • ½ avocado
  • ½ mug fresh basil
  • 4 cloves garlic
  • lime juice from 1 lime
  • 1 tbsp almond flakes / or whole almonds
  • mug olive oil
  • 2 tbsps parmesan cheese
  • ½ tsp salt
  • a pinch of black pepper

Pasta salad

  • 500 g farfalle pasta
  • 200 g cherry tomatoes
  • 1 big red onion
  • 2 green bell peppers
  • 1 whole spring onion
  • 1 can canned corn
  • 3 small red radishes
  • a pinch of salt
  • lime juice from 1 lime
  • a pinch of black pepper
  • 200 g mozzarella

Instructions
 

  • Start with boiling the pasta for 12-15 minutes or follow the instructions on the package. Let the pasta cool for a few minutes. Prepare a huge bowl.
  • In the meantime, chop up the vegetables you chose for this salad. Also, cut the mozzarella into small cubes.
  • In the food processor mix avocado, olive oil, fresh basil, garlic, lime juice, almonds, parmesan cheese, salt, and black pepper. Mix on high speed until the pesto is smooth.
  • Into the bowl put pasta, chopped vegetables, mozzarella cubes, salt, black pepper, lime juice, and fresh pesto. Give it a good stir.
  • Serve with extra parmesan cheese on top and for more protein add tuna.
