CrINKLE brownies thanks to warm butter
These brownies are perfectly firm but also fudgy and melting. I like brownies with a crinkly top and as many food bloggers said, there is a trick you can try to reach that. The mystery is solved – warm butter with sugar. The technique is so easy. Just warm up butter (in the microwave or on the stove) for 30 seconds. Add sugar. Then whisk with an egg whisker and warm up again for 60 seconds. I saw a few bakers who have done this and their brownies were chef’s kiss stunning. So I tried it as well. AMAZING.
In case this way doesn’t go well for you, next time try whisking eggs separately in another bowl, and then add them to the rest of the ingredients. I saw many other ways how to reach that crinkly top and so many people said they couldn’t make it. I guess it’s all about the technique and the oven.

Brownies as the most perfect dessert for everybody
Not gonna lie – I think that brownies are the coolest. You can serve just a piece of brownie and people are good and satisfied. You can serve brownies with a scoop of ice cream, pour some melted chocolate on top, whipped cream, or serve them with fresh fruit like strawberries. YUM.
My brownie journey was long and it took so many errors along the way, that now I understand the difference of VERY undercooked brownies and perfect fudgy brownies. Try my awfully simple written (but still delicious) Mars Brownies With Caramel Crackers or Brownie Cookies that have this crinkly top as well.

Fudgy Brownies With Salted Peanuts
Ingredients
- 120 g unsalted butter
- 210 g brown sugar
- 130 g chocolate
- 100 g flour
- ½ tsp baking powder
- 30 g cocoa powder
- 2 eggs
- 1 egg yolk
- ½ tsp instant coffee
- salted peanuts on top of the brownies
- 50 g chocolate on the top
Instructions
- Preheat the oven to 175°C. Prepare a small baking sheet (23 x 28 cm) with attachment paper on it.
- Start by melting butter in the microwave (for 30 seconds) or on the stove. When the butter starts to be runny and warm, add brown sugar and mix well with an egg whisker (do not whip it). Now, get the butter with sugar back into the microwave or on the stove, and heat up for 40 seconds. Mix again.
- Chop the chocolate and add to the warm butter mixture. Mix again until the chocolate is completely melted. Once it's combined well, add eggs and egg yolk. Mix again.
- Now add the rest of the ingredients. Pour the brownie mix on the baking sheet and bake for 25-30 minutes. When you get them out of the oven they should be still a little jiggly. Let them cool on the baking sheet for 10 minutes and them let them out to cool completely.
- Melt the chocolate and let cool on the stove. When the brownies are completely cool, put salted peanuts on top and cover them with cool melted chocolate.
